If you have some fresh or frozen fruit that you would like to quickly turn into a pie-like dessert to serve with whipped cream, ice cream or custard try this.

Ingredients - Batter

  • 120g white flour
  • 180g milk
  • one large egg (about 60g)
  • 14g sugar
  • 6g baking powder
  • 2g salt
  • 22g melted butter
  • a possible experiment is to put some quick oats into this too.

Ingredients - Fruit

You can use any fruit (whole or chopped) that you might find in a pie. You're looking for about 400-500g of fruit and some juice. Some ideas include:
  • raspberries
  • apples
  • blue berries
  • rhubarb
  • or even some nuts and raisins

Preparation

  1. preheat oven to 425F convection
  2. put all the batter ingredients into the mixing bowl of your Kitchen Aid stand mixer and mix on medium until you have a smooth runny batter
  3. put the fruit into a pyrex baking dish, having first thawed any frozen fruit, add sugar to taste
  4. pour the batter over top of (and into) the fruit
  5. bake for 30-40 minutes, until golden brown on the top and the fruit juices are bubbling up
  6. serves 6-8
